Sometimes I install applications and the install associates files with the application that I don’t want it to. For instance, one annoying thing with Adobe Creative Suite 2 is when Acrobat associates PDF files with itself. Acrobat is slow loading and has too many buttons for me to effectively navigate through a PDF. Preview is an amazing application for viewing PDFs, on the other hand.
OS X makes it easy for me to quickly change what application handles a certain file.
Open Finder and navigate to a file whose association needs to be altered.
Hit Cmd+I or Ctrl+Click the file and Select Get Info from the menu.
Find Open With: in the info window that pops up.

Select the Application from the drop down menu. If the application is not listed, select Other… and navigate inside the Applications folder.
If you want to change the association with all files of this kind, Hit Change All…
